Buffalo Chicken Pizza

Yum num num num!! I got this recipe from Sandra Lee. Super yummy!!!


Ingredients:

  • 1 lb chicken strips cut into small pieces
  • 1 cup buffalo wing sauce plus a little extra for drizzling
  • 1 pizza dough
  • 1 cup blue cheese dressing (I used Ranch instead)
  • 2 cups shredded mozzarella cheese
  • 1 cup diced red onion
  • 1 cup diced celery
Directions:
Place chicken in a bowl and coat with buffalo sauce then grill in a grill pan.
Spread out dough on a greased cookie sheet.
Top dough with ranch dressing, onion, celery.
Drizzle a little buffalo sauce all over.
Top with chicken then cheese and bake at 400 degrees for about 10 minutes. Watch it carefully so it doesn't burn.

Homemade Garlic "Knots"

Technically they should be called squares?? But you can make them into whatever shape you want!! All I know is that I ate like 50 of them in one sitting!!


Ingredients:



  • 1 store bought pizza dough (you can buy them in the deli)
  • freshly chopped parsley
  • couple drizzles of olive oil
  • 4 garlic cloves chopped
  • 1/2 stick of butter
Directions:

Roll out pizza dough then cut it into square (or you can make them into "knot" shapes). Brush the top of them with a little olive oil and bake in a 400 degree oven for about 10 minutes (or until done).

In a saucepan mix olive oil, butter, and garlic until butter is melted and garlic is cooked a little.

Once dough is cooked put the squares into a bowl and toss with the garlic, butter, olive oil mixture until well coated. Sprinkle some Parm cheese and parsley on top and eat!!!

Natalie's Potato Soup

Everyone and their brother has a potato soup recipe. But clearly mine is the best! ;) So good in fact it will make you wanna slap yo' momma! Here is my version. 


Ingredients:

  • 8 baking potatoes pilled, cubed, and boiled until fork tender
  • 1/2 stick of butter
  • 1 cup of milk
  • 1 can of chicken broth
  • 1 can of cream of chicken soup
  • 8 oz of sour cream
  • 5 slices of bacon chopped
  • 2 lbs of shredded cheddar cheese
  • 1 small yellow onion chopped
  • 2 tablespoons of flour
Directions:
  • mash potatoes in a bowl but  leave a couple of small chunks
  • in a pot add butter and bacon, cook until bacon is crispy
  • add onions and saute for a couple of minutes
  • add flour and scrape bacon bits off the bottom of the pot
  • add milk and stir with a whisk until flour is mixed in 
  • add chicken broth, cream of chicken, and sour cream
  • add potatoes and cheese stir until everything is mixed
  • salt and pepper to taste 
Pour in bowls and top with whatever you want!! Chives...scallions...more cheese....chili...

The View From Here

November in Florida is easily my favorite time of year. The weather is always gorgeous. We spent last Saturday playing outside. Not a cloud in the sky and it was a nice 76 degrees.

Is That Chocolate or Poop??

I have to ask myself that on a daily basis. Random brown spots pop up on my shirt....I have to do the good 'ole sniff test. Is this Reese's candy bar remnants or Riley poop?? By the way for this post I chose a nice shade of baby diarrhea for the font color. Now there are two warnings to what you are about to witness. LOTS of pics to chronicle the events and a little bit if baby bum here and there.


I will set you up first. It is IM-POSSIBLE to change Riley's diaper. She wiggles and squirms and tries to get away. So it takes me about 15 minutes to change her. Throw in an explosive diaper and I have to call in reinforcements (Reese or Mike or sometimes Marty!) This particular night includes poopie and lots of it! After me trying to change her diaper for about 10 minutes I finally give up and Mike takes over on the floor (after I cleaned the poop of course!). There was poop everywhere. Oh the horror....
