Ingredients:
- 8 baking potatoes pilled, cubed, and boiled until fork tender
- 1/2 stick of butter
- 1 cup of milk
- 1 can of chicken broth
- 1 can of cream of chicken soup
- 8 oz of sour cream
- 5 slices of bacon chopped
- 2 lbs of shredded cheddar cheese
- 1 small yellow onion chopped
- 2 tablespoons of flour
Directions:
- mash potatoes in a bowl but leave a couple of small chunks
- in a pot add butter and bacon, cook until bacon is crispy
- add onions and saute for a couple of minutes
- add flour and scrape bacon bits off the bottom of the pot
- add milk and stir with a whisk until flour is mixed in
- add chicken broth, cream of chicken, and sour cream
- add potatoes and cheese stir until everything is mixed
- salt and pepper to taste
Pour in bowls and top with whatever you want!! Chives...scallions...more cheese....chili...
